I absolutely love my slow cooker. Even though it gets used mostly during the winter, it’s great to bust it out every once in a while to make yummy one-pot dishes. This is somewhere between a stew and a hearty soup, so it is not heavy for summer. The original recipe comes form the Weight Watchers New Complete Cookbook, and is great because it does not require much prep, and it is easy to make tweaks and substitutions. Next time I am planning on swapping the turkey kielbasa with some chorizo or another spicy sausage to give the dish a little kick. Continue reading
Pasta with bolognese sauce is a staple in our house, but as I’ve gotten “older”, I find that ground beef sometimes sits heavy in my stomach after dinner, particularly if I go overboard with the garlic. I recently started substituting ground beef with ground turkey in my bolognese, and have been thrilled with the results. The ground turkey absorbs all the flavors of the onions and garlic, while making the sauce light, or as light as a bolognese can be. Even though this recipe is not a traditional bolognese, it has all the ingredients I love: onions, garlic, and tomatoes. Also, the broccolini gives it a nice splash of color and texture. Serves 4. Thanksgiving has always been a special holiday for me. I’m not religious, so Christmas is great for presents and all but it’s not a holy day for me. Birthdays are great when you are a kid but when you get older, meh.
When I was a kid we always had huge gatherings for Turkey day. My grandmother had remarried before I was born and I had more aunts and uncles than I knew what to do with. It was a real Brady Bunch type situation. How my grandmother managed to cook such a giant meal in such a tiny kitchen is something that still amazes me to this day.
