A Sandwich for Liz Lemon

A couple of weeks ago when I first heard the news that Liz Lemon was getting married – and that guests were asked to bring their own snacks – I decided to make a meal that was fitting for the occasion. In fact, a friend of mine and I even decided to have a little party to celebrate. But, life intervened and we couldn’t get together, so I completely spaced my food plans.

However, after writing about nutritious food all day on Thursday the 29th, I looked at the calendar and realized that it was Liz Lemon’s wedding day, and I had nothing prepared to munch on in front of the television! (Except for two types of lentil salad.)It was already 7 p.m., so I needed to come up with some Liz Lemon food, toot sweet.

Scanning the kitchen shelves and fridge, I saw English muffins, Brussels sprouts, onions, squash, chick peas, three kinds of lentils, kale, olives, cheddar, Swiss chard, lettuce, tomatoes, chicken and bacon.

Why not make an open-faced English muffin sandwich with bacon, olives and tomatoes and drench it in a cheddar cheese sauce?

I mean, it seems like a fitting sandwich for a television character who replaces the water in stew with cheese.

(Although, I’m not sure that she would approve of the green olives, tomatoes, bacon or English muffins – I’m just taking a flier on those ingredients.)

So here’s a little sandwich for you and Chriss Chros, Ms. Lemon. Even though marriage can be life changing, I hope that you will still pee in the shower when you’re really tired, and continue to laugh at blind men eating spaghetti.

A Bacon and Cheddar Cheese Sauce Sandwich – aka a Sandwich for Liz Lemon

  • 2 toasted English muffins
  • 1 small onion, diced
  • 1 tablespoon of butter
  • 1 ½ tablespoons of flour
  • 1- 1 ½ cups of milk
  • 1 cup of sharp cheddar cheese
  • Black pepper
  • 8 slices of cooked hickory smoked bacon
  • Cherry tomatoes
  • Green olives

In a small saucepan melt the butter and saute the onion until softened, about 5 minutes. Add the flour and stir for 1 minute. Add 1 cup of the milk, and whisk over medium-low heat until the sauce thickens. (If it is too thick, add the additional milk.) Add the cheese while constantly whisking. Once all of the cheese has been incorporated, remove the sauce from the heat and add black pepper.

Layer the sandwich by dividing bacon between the 4 English muffin halves. Top with cheddar cheese sauce, chopped tomatoes and green olives. Serve any remaining cheese sauce on the side.

Enjoy with a glass of white wine while snuggling in a Slanket.
