Recipe Sunday: Roasted Asparagus with Tomatoes and Feta

There are some days when dinnertime sneaks up on you and you realize you only have 30 minutes to whip something up lest you turn into a hungry monster. It is good to have quick and easy recipes in your back pocket for those times. This recipe takes 30 minutes from start to finish and it will become a favorite in your house.

Ingredients

  • 1 lb. asparagus
  • 1/2 cup cherry tomatoes
  • 2 tbsp. olive oil
  • salt, pepper, garlic powder, and paprika or chipotle powder
  • crumbled Feta cheese

Preparation

Preheat oven to 350 °F. Rinse asparagus and remove about 1 inch from the bottom of the stem. Place asparagus on a cookie sheet, and arrange the cherry tomatoes in between the spears. Drizzle with olive oil, and sprinkle with a little bit of salt, pepper, garlic powder, and paprika. Roast the vegetables for approximately 25 minutes. Remove from the oven and sprinkle with Feta cheese. That’s it! This would make a great side for a nice steak or fish main course.

Tip: store your asparagus upright in the refrigerator in a container with about 1/2 inch of water and they will stay fresh for up to a week.
