Recipe Sunday: Apricot Glaze Chicken Wings

This recipe is not only great for chicken wings, but can be adapted for the whole chicken. My mom got the recipe from a friend, and many years after I first tried it, and over 2,000 miles away, I immediately identified the ingredients while I was at dinner at an acquaintance’s house in Denver. It truly is a recipe that’s traveled the world, and it’s always a hit.

Ingredients:
20 chicken wings
1 packet of onion soup
1/2 jar French or Catalina salad dressing
1/2 jar apricot preserves

Directions:
Mix onion soup, dressing, and preserves in a large plastic or glass bowl. Marinate chicken wings for at least 2 hours. Preheat oven to 375 degrees F. Place chicken wings and marinade on a 13×9 glass pan, and cover with aluminum foil. Bake for 20 minutes. Remove foil, turn wings, and cook until wings are done, about another 20 minutes. You can also place wings on a cookie sheet lined with aluminum foil and bake them for 40 minutes, turning once. If you do it this way, the sauce will caramelize on the wings. Serves 2.
