Recipe Sunday: Tres Leches


I recently returned from a nice long vacation in my hometown of Panama. There was a LOT of eating, especially desserts. My favorite dessert of the whole trip was the Tres Leches. I had several variations, but my favorite was the one at this great restaurant called Market. The key to this dessert is giving the yellow cake enough time to absorb the cream, and serving it chilled.

Ingredients:

  • 1 can evaporated milk
  • 1 can condensed milk
  • 1 cup whipping cream
  • 1/2 teaspoon cinnamon
  • 1/4 cup Baileys Irish Cream (or your favorite alcohol)
  • 1 box yellow or vanilla cake mix
  • Cool Whip

Preparation:
Bake yellow cake mix according to package directions. Let cool. Mix evaporated milk, condensed milk, whipping cream, cinnamon, and Baileys in the blender. Slice the cake into 1/2 inch slices, and start laying the slices on a 13×9 baking pan. When you have a layer of cake down, add some of the blended mix until the cake absorbs the liquid. Repeat the process (as if you were making lasagna) until you use all the cake and blended mix. Frost with Cool Whip and refrigerate.
