Recipe Sunday: Hello Dolly Bars

One of the best things about Fall weather (even in hot-ass Florida) is that it feels “right” to start baking. Although it is not quite cool here yet, I find myself fantasizing about baking all sorts of pies, tarts, cakes, and cookies. I like this recipe because it is so easy to make, even on a lazy Sunday afternoon, and it only ties up the oven for about 30 minutes, which means the house won’t get unbearably hot. Unfortunately, I haven’t been able to find a good explanation for the name. Be warned, these bars are like crack.

Ingredients

  • 1/2 cup butter, chopped
  • 6 oz. crushed graham crackers
  • 4 tbsp. brown sugar
  • pinch salt
  • 1 cup shredded coconut
  • 1 1/2 cups semisweet morsels (substitute dark chocolate morsels if you don’t like things too sweet)
  • 1 can (15 oz.) sweetened condensed milk
  • 1 cup walnuts or pecans, chopped

Preparation
Preheat oven to 350 degrees F. Combine the butter, graham crackers, sugar, and salt in a bowl. Press the mixture evenly over the bottom of a 9×13 un-greased baking dish. Layer the coconut, the chocolate morsels, the condensed milk, and the walnuts. Bake for 30 minutes. Allow to cool fully before cutting into slices.
