What we have is a squid bowl of some kind that comes to life when soy sauce is applied.
The theory goes that the sodium causes the (mostly?) lifeless squid’s muscles to react. You’ll never be able to get this image out of your mind. You’re welcome and good luck with your new found vegetarianism.
