A few weeks ago I shared with you a recipe for chicken tostadas. Since then, I couldn’t stop thinking about making some slow-cooked pork carnitas to try with the tostada recipe. I looked around the web for some inspiration, and then decided to create my own concoction, since I wanted a slightly sweet carnitas. The best part is that we used the leftovers a few nights ago. We just added a little barbeque sauce and bam: pulled pork sandwiches. Gotta love a dish that can multi-task. Continue reading

Recipe Sunday: Hearty Black Bean Soup

I recently had a craving for a thick and hearty black bean soup. After wandering the aisles of the grocery store without finding anything that was prepared, I pulled out my phone and realized that making it from scratch would be super easy. This black bean soup is loaded with pork products: pork belly for the fat base, and prosciutto and chorizo for flavor. Sorry vegetarians! Another great recipe inspired by Dave Lieberman. Serves 4. Cider-Braised Pork Tenderloin with Onions and Apples

There’s an expression that sums up living in New England in the fall: “We take half of our pay in the view.”  The leaves have started to turn but they aren’t at peak quite yet. And once the leaves are bright gold, red and orange, the delicious aroma of apples will float into my open car windows while I’m driving down the road. I think it’s pretty magical, but in reality the smell comes from apples that have fallen from trees and are disintegrating on the ground. But I don’t dwell on the science of the aroma – I just look forward to it. Continue reading
