One of the best parts of holiday eating is grazing through the leftovers for the week after the actual holiday meal. Everyone has their favorite ways to eat leftovers, so I thought we could all share ours here.
This is a recipe my mom used to make. She got it from a 1950s Betty Crocker cookbook. The first year she made it everyone thought it would be really icky, but it turned out that it was actually really tasty. I still make this for my family when I have the chance because it is a great way to use up your extra turkey and it is easy to make.
TURKEY BOMBAY
- 4 TBS butter
- 2-3 tsp curry powder
- 1/2 cup chopped onion
- 3 TBS all purpose flour
- 1/4 tsp salt
- dash pepper
- 1 1/2 cups chicken broth
- 2 cups diced cooked turkey
- 1 tsp shredded lemon peel
- 2/3 cup jasmine or basmati rice
- 1/2 cup chopped cashew nuts
- 2 TBS chopped canned pimiento
In medium skillet melt butter. Add curry and heat 2-3 minutes. Stir in onion and cook until tender but not brown. Blend in flour, salt, and pepper stirring well. Add chicken broth all at once. Cook and stir until boiling; cook 2 minutes longer. Add cooked turkey and shredded lemon peel; heat mixture until boiling.
Cook rice according to package directions. Stir in cashew nuts and pimiento. Serve turkey mixture over rice. Makes 4-6 servings.
