Friday Happy Hour

Happy cocktail time, Crasstalkers. It’s been a rough week for some of you, and it sounds like everyone needs to forget about Tuesday. So let’s booze it up, shall we?

Here are three ideas to get you started.

Cilantro and Cucumber Martinis

4 ounces of vodka (the better, the better)

1 inch of finely diced English cucumber

¼ cup of cilantro

Ice

Crush the cucumber and cilantro in a mortar and pestle to make as fine a paste as possible. Pour the vodka, cucumber and cilantro paste into a martini shaker. Let it sit for about an hour, then add the ice, shake, and strain infused vodka into martini glasses. Garnish with cucumber and cilantro.

A Gingered Highball-Julep

Chop and crush one tablespoon of fresh mint and six or seven slivers of fresh ginger. Put two ice cubes in a large glass. Add two shots ginger ale and stir vigorously to make a quick infusion. Add two shots “good” bourbon (Basil Hayden or Knob Creek are preferred, but Rebel Yell is good too. Note for the poors: Rebel Yell is cheaper than most bottom shelf whiskeys and it’s the best of the bunch, even served just on the rocks. Note to snobs: don’t knock it till you’re poor enough to try it). Add one drop of bitters and a few slivers more fresh ginger for a crunchy, spicy treat.

Salty Dog

Treat a rocks glass like a margarita glass and rim it with salt. Then add equal parts vodka to pink grapefruit juice.

I’m not going to lie, I just had my first Salty Dog this week, and holy. The salt with the grapefruit juice is incredible. I was on the phone with my mother-in-law while I had my first sip and –- for the first time since we have known each other — I think she thought I was fervently agreeing with everything she said because I said “Yes!” and sighed happily (For the record, I was blissed out and I’m not sure what I agreed to). But let’s not think about any unpleasantness, because it’s Friday, and we all deserve a cocktail.

Recipe Saturday: Chicken Marsala With Dry Vermouth

The first time I had chicken marsala was at our friend’s wedding rehearsal dinner in 2006. It was delicious, and I’ve craved it occasionally since then. But, I’ve never made it, mainly because I never think to buy marsala wine. But, then I read that dry vermouth can be swapped out for the marsala. And guess what? I just happened to have a bottle of vermouth languishing on top of our refrigerator.

Marsala normally has mushrooms, but I don’t like them and the dish was so incredibly rich that I can’t imagine how it could have had any more flavor. Seriously.

Chicken Marsala With Vermouth

Olive oil

2 ounces of pancetta

2 sliced shallots

4 thin chicken breasts

Flour for dredging the chicken

Pepper

2 teaspoons of paprika

1 cup of vermouth

5 tablespoons of heavy cream (don’t substitute half and half, trust me on this)

Parsley

Saute the pancetta in a tablespoon of olive oil. When it’s browned, drain it on paper towels.

Saute the shallots in the pancetta drippings and set them aside.

Add more olive oil to the pan and heat it until a drop of flour sizzles in pan. While the oil heats, thoroughly mix together the pepper, paprika and flour. Dredge the chicken in the flour mixture. Fry the chicken in the olive oil, approximately 7 minutes a side. (I like a lot of color on my chicken especially when making a pan sauce, so this is only a guide.)

When the chicken is done, drain it on a paper towel. Turn the heat off, and add the vermouth to deglaze the pan.

Turn the heat back on low, and add the cream. Then add the chicken and shallots into the pan, reheat the chicken and serve over your starch of choice.

I served the chicken and sauce over couscous, because I am madly in love with couscous right now.

Then I added chopped parsley, for contrast: cold against hot, light against the rich cream sauce. And it was incredible – the salty pancetta, the crisp chicken, the creamy vermouth sauce, the shallots, the parsley, the couscous. When my husband came home I was sated. I couldn’t even eat more than half of the piece of chicken.

Which raises the question, “If you make a dish with bacon and heavy cream but can only eat a portion of it, is it really that bad for you?”

Recipe Sunday: Passover Edition, Asparagus Soup With A Bitter-Herb Gremolata

What is a shiksa, a goy, a lapsed Catholic doing writing one of the Crasstalk Passover recipes? Well, because it’s a chance to delve into history that’s not my own, and possibly become a better friend – by making asparagus and leek soup with a horseradish gremolata.

My best friend in high school, (oh, so many years ago), is Jewish. And she left our hometown in Vermont after marrying a nice Jewish boy who was going to be attending medical school in Alabama.

But before she left, she asked me to hold the huppah at her wedding. For those of you who aren’t already familiar with the huppah, picture a wedding tent with – as you might expect – four poles. Now picture a tent whose four poles aren’t pushed into the ground, but instead held up by loved ones of a bride and groom. My friend “Dana’s” future husband’s brothers held up three of the poles and I, who in 1992 was a whopping 125 pounds soaking wet, was holding up the fourth. The tent was over 50-feet long and so incredibly heavy that by the time “Dana” started down the aisle, my elbows had buckled. By the time she made it to her fiance, my arms were shaking uncontrollably, and men in the first row were mouthing the question, “Do you need help?” I shook my head, “No.” Because I could not physically unclench my fingers.

They were paralyzed, as if I’d been playing that children’s game in which you curl your fingers into someone else’s fingers and pull back hard for a few seconds and, (voila!), you have paralyzed fingers. I thought of that game the entire time my best friend was getting married. It distracted me from crying, though.

“Dana” left for Alabama the next week, and she has been down there for nearly 20 years. Since then, she has become incredibly involved in an Alabama synagogue, and that has brought out a new and much more religiously devout woman, a woman I am still getting to know.

So, when the idea of this post came up, I was thrilled. I love any chance to work with food. But, then it dawned on me that I know nothing about a traditional Passover meal, other than “no leavened bread.” And to write this article I had to do a lot of research, and put some thought into the meaning of the food that means so much to so many people. Now, at least I know that forbidden leavened products are called chametz.

I chose this recipe specifically for its spring ingredients (hello asparagus!) and for the fact that the maror, (a group of bitter herbs that symbolize the bitterness of slavery under the Pharohs), would marry perfectly with the asparagus. Instead of using the traditional freshly grated horseradish I used homemade prepared horseradish. (This is made by my grandmother, who makes it once a year in a dedicated blender. She doesn’t do this to make sure that the horseradish is kosher – she does it because the horseradish is so pungent that it can’t be washed away.) In a nod to the fact that many people who celebrate Passover have special dishes that they serve it from – dishes that have never had contact with chametz – I used a pretty soup bowl that my mother gave me. I’m not a hundred percent sure that it has never come into contact with chametz, but I’m 99% sure; She’s not a big fan of crackers or bread with soup.

And just putting this meal together has helped me feel a little bit closer to my friend in Alabama, who I’ve only seen a handful of times over the last two decades.

At any rate, posting a recipe for Passover is more useful to “Dana” than the time I helped her get married.

Asparagus and Leek Soup With a Horseradish Gremolata
Preheat oven to 350 degrees.

  • Olive oil
  • Salt and pepper
  • 1 large bunch of asparagus.
  • 4 large leeks
  • 1/4 cup of white wine (I used Pinot Grigio, but very few people will judge you if you use White Zin.)
  • 4 cups of chicken broth

Gremolata

  • 1 teaspoon of flat leaf parsley
  • 1 teaspoon of lemon zest
  • 1 teaspoon of prepared horseradish
  • 1 teaspoon of diced shallots (Garlic is traditional, but I loathe it, so I substituted shallots.)

 

Trim asparagus by bending the stalk until it breaks naturally. Place asparagus on a sheet pan with 2 tablespoons of olive oil and salt and pepper. Roast the asparagus for 10 minutes, or until it has browned slightly. (You don’t want to overcook the asparagus, you just want it soft with color.) While the asparagus is cooking, wash the leeks thoroughly, slice them, and saute them in olive oil in a soup pot. Once they have wilted, add the white wine and cook until they are very soft. Chop the cooked asparagus in half and add to the soup pot. Add the chicken broth. Blend the vegetables and broth until smooth. Either do this in batches in a blender or use an emulsifier. Then heat the soup, ladle into bowls and add the horseradish, lemon zest, scallion, and parsley.

The soup is simple to make, and it’s very thin – nearly a consomme. But, it’s incredibly delicious, and the gremolata adds a layer of flavor that makes this little soup big and bold. This isn’t meant to be the centerpiece of a Passover meal, but it would make a lovely springlike and kosher beginning to a heavier dinner.

Recipe Sunday: The Classic Bloody Mary

Nothing says Sunday like a Bloody Mary. It’s an important part of many brunches and (depending on your Saturday night and the heartiness of your Bloody Mary) can take on the role of a full meal if you’re not careful. There are also few things less classic then a Bloody Mary in a gigantic A&W mug. But I think that the parfait spoon to dig out the olives helps elevate this to near “classic” status.

So, welcome, hung-over Crasstalkers, to a classic Bloody Mary that could substitute for any meal.

Bloody Mary

  • Large glass mug
  • Three ice cubes
  • Many turns of the peppermill (between 10 and 20 depending, on your constitution and preference)
  • Dash celery salt (or fresh diced celery leaves)
  • Several healthy dashes of Tabasco
  • 1/8+ inch Worcester sauce
  • 1/2 fork-full of  horseradish
  • Splash lemon juice
  • 3 olives (these are an important part of your meal, they have a bit of protein, and they’re solid.)
  • Vodka to cover your ice (and a hair more just because, hey, this is a meal)
  • Tomato juice/spicy V-8 to top off the glass

Add a celery stalk, if you want to feel fancy and have a tool to continually stir your ingredients so you don’t just get a mouthful of sludge at the bottom. (Or in case you are so hung over that you need to check your reflexes by stirring your drink, and patting yourself on the head simultaneously.)

Clearly, these are just rough guidelines. The idea is, don’t be afraid of your Sunday morning and if this doesn’t put hair on your Misters or your “Little Suzy”, then you’re not doing it right. But remember, practice makes perfect.

Especially on a Sunday.

Time Machine Book Review: The Timothy Files and Timothy’s Game

When the term Private Investigator comes up in conversation, everyone has a touchstone. Whether it’s Magnum P.I. or Sam Spade, the overall tradition has been of a man who is pithy, good with the ladies, drinks, smokes, and kills, albeit reluctantly and usually in self defense.

Ladies and Gentlemen, meet Timothy Cone.

Although he’s a private detective and fits the bill of stereotypes, he’s not pithy. In fact, he’s the only detective who has forced me keep a dictionary handy to translate his verbosity during the reading of Lawrence Sanders’ wonderfully funny and unfortunately too short series of 2 books containing 3 short stories each.

Timothy Cone works for Haldering & Co. a Manhattan Wall Street firm that investigates clients for buyouts and mergers. Pretty dull stuff in theory, until the murder, sex, (the stories take place in the 1980’s, so there is a lot of cocaine and some ebullient wife-swapping) and thievery of the clients make the books difficult to put down. With plots that are so realistic they can awaken the felon a reader never knew they inwardly possessed, (I know now how to commit insider trading if it was 30 years ago).  The books “The Timothy Files” and “Timothy’s Game” have intricate descriptions of Manhattan when it was still dirty and dangerous, with mind-numbingly intelligent plots that make these short stories some of the best mysteries I have ever read. And re-read. And still laughed out loud at, 16 years after I read them for the first time. But the best thing, is the is the dialogue. (And the fact that when Cone leaves his apartment he orders his cat, Cleo not to masturbate while he is gone.)

Cones’ description of his romantic interest Samantha Watling, (his boss): “an iron fist in an iron glove.”

About a briefcase full of papers he has to carry home: “I lugged the blivet down here.” *

Admiring an attractive woman: “What a dish! He suddenly remembers a gyrene** buddy of his spotting a similar woman on the street and remarking admiringly, ‘all you need with that is a spoon and a straw.'”

A sergeant he’s working a case with, who constantly bums cigarettes: “I’m trying to quit smoking by not buying cigarettes. Now I’m going to die a mooch with lung cancer.”

To a libidinous older police detective he’s eating lunch with: “Your a dirty old man.” “Well, I was a dirty young man, I haven’t changed.”

These stories are fast paced, daring, and the perfect mix of noir and humor. And I haven’t loaned one out without the person becoming a convert. A girlfriend who’s never read a mystery, a friend before he was shipped to Iraq, a theater production designer – they all came back raving and quoting the book randomly over drinks.

Timothy Cone can make friends among the most diverse groups of people.

I’m not a fan of Lawrence Sanders’ ‘Deadly Sin’ series, or any of his other books actually. They never captured my interest. But, to re-work that stupid Jerry Maguire quote into the ground in regard to Timothy Cone, “He had me at scragged.” ***

Recipe Sunday: Prosciutto, Dill and Cheddar Popovers

When we first started our cooking blog, one of the first posts was about popovers. At the time I was convinced that cold-oven popovers were the best choice over popovers made in a preheated oven. The science made sense (cold batter brought slowly to a very hot temperature would create steam to make them pop) and to be honest, I had only eaten/made cold-oven popovers. And my husband and I loved them, and the cats vied for scraps.

But, with the new year, a sad thing has recently happened to our oven; It takes forever to heat up now and recent attempts at making popovers have been a gooey mess without a crisp crust, or any height.

So, I decided to make popovers in a hot oven and … wow.

What a difference starting off at 400 degrees can make.

Here is the photo that accompanied the cold oven method. They had popped, but they weren’t killing themselves being overly ambitious.

All six of them  looked like Tomoyuki Tanaka movie monsters.

And their height and airiness was even more surprising considering the fact that they had prosciutto, dill and cheddar in the batter.

Prosciutto, Dill and Cheddar Popovers (Hot Oven Method)

  • 1 cup of milk (warmed in the microwave for 45 seconds)
  • 1 cup of flour
  • 2 eggs
  • 3 tablespoons finely chopped dill
  • ¾ cup of shredded cheddar cheese
  • 2 slices of finely diced prosciutto
  • 1 teaspoon of salt and 1 teaspoon of black pepper
  • 2 tablespoons of butter, melted

Preheat oven to 400 degrees.

Pan fry the prosciutto in olive or grapeseed oil until brown and crisp.

With a pastry brush use the melted butter to grease the muffin tin cups, and place the pan in the oven for a couple of minutes until the butter is sizzling.

Add salt, pepper, cheese, prosciutto, flour and eggs to the warmed milk.

Take the pan out of the oven and drizzle the rest of the melted butter into the bottom of the tins. Pour the popover batter into the tins until they are approximately 1/2 to 3/4 full.

Place the muffin tin into the hot oven and tiptoe away from the stove for 35-40 minutes. (Even if they aren’t done at 35 minutes, they won’t collapse if you take a peek and decide they need to brown a little bit more.)

Making Homemade Ricotta and then Italian Bread With The Whey

This fall I stumbled on a recipe for homemade ricotta. I had no idea that making ricotta was even an option in an apartment kitchen, let alone a kitchen that can barely fit two people standing side-by-side. But there it was – an incredibly easy ricotta recipe on Epicurious. And, in the comments following the recipe, a woman talked about making bread from the whey left over from making the ricotta. Holy shit.

Homemade Ricotta (via Epicurious)

2 quarts whole milk

1 cup heavy cream

1/2 teaspoon salt

3 tablespoons fresh lemon juice

Very slowly bring the milk, cream and salt to a boil on moderate heat and stir occasionally to keep it from burning. Then lower the heat, add the lemon juice, stir it constantly and watch it curdle.

 

 

 

 

 

 

 


At this point you will think, “Wow, what a mess. This was a tragic waste of time.”

But, continue on anyway. Line a colander with the cheesecloth, and place it over the bowl. Slowly dump the curdled mess into the colander.

Let it sit for an hour. Then you will be in awe of yourself. You will pat yourself on the back while simultaneously calling your friends, co-workers, parents, ex or current lovers, your veterinarian, and your old college roommate.

You just made homemade ricotta!

And not just any homemade ricotta, you will have made the best ricotta that you have ever tasted. Slightly lemony, thick and soft, ricotta. (See top photo.)

Take a bow, and then get back to work – because collected in the bowl is a lot of whey, and you’re going to make 3 loaves of incredible Italian bread with it. (Recipe via Eating Small Potatoes with a few tweaks)

Homemade Italian Bread

5 cups all-purpose flour
2 tsp. salt
1 tbl. sugar
4 1/2 tsp. yeast

3/4 hot whey
1 cup warm water
5 tbls. melted butter

Additional ingredients (to your preference) are cornmeal and sesame seeds.

Add dry ingredients to the bowl and stir.
2. Heat the whey and water in a saucepan. Pour butter into the whey/water mixture.
3. Add the liquid ingredients to the dry ingredients. Stir well until combined. (At least 5 minutes.)
4. Divide dough into 3 loaves. Pat the dough into a rectangle and then roll up into a cylinder. Pinch seams and edges, then shape.
5. Place the loaves onto a sheet pan sprinkled with cornmeal. Cover and rise in a warm place for 1 hour.
6. Paint the loaf with egg white and sprinkle with sesame seeds.
7. Bake at 425F for 30 minutes.

Amaze your friends and astound your enemies with your culinary prowess.

Recipe Sunday: Chipotle Chicken With Cumin Cream Sauce

Our anniversary was last week, and to celebrate we walked around Burlington and then we went out to dinner.

It was an amazing dinner. In fact it was so good, that I intentionally left about half of it on my plate to bring home for dinner the next night. But, the restaurant was busy, we had shopping bags in the booth with us, and it took us a while to pile on our layers of winter attire. As a consequence, I didn’t realize that I had left my doggie bag on the restaurant table until we were half-an-hour away.

I’m not going to lie, I was irrationally annoyed.

And I know that, “Something, something, something, is the chipotle chicken of invention.” So I decided to try to recreate the dish.

Chipolte chicken with cumin cream sauce

  • 4 chicken breasts
  • 1 tablespoon of chipotle powder
  • 1 tablespoon of ancho chili powder
  • 1 tablespoon of hot smoked paprika powder
  • 2 teaspoons of cayenne powder

Mix the spices together on a plate.

Cumin cream sauce

  • 1 large diced red onion
  • 1 large sliced shallot
  • 3/4 cup of white wine
  • 1/3 cup of half and half
  • 3 teaspoons cumin

Rub the chicken breasts with olive oil on both sides, and coat the breasts on both sides with the spice mixture.

Grill both sides of the chicken until done and tent the with foil to keep warm.

For the cumin sauce: In a small saucepan saute the sliced shallot and diced onion in olive oil. When the onions and shallots are soft, add the white wine and remove from heat. Stir in the cumin and, when the sauce has cooled for approximately 5 minutes, turn the heat on low and slowly add the half and half. (Letting the sauce cool for a few minutes will keep the sauce from breaking. (Or it least it helped quell my paranoia about the sauce breaking.)

Slice chicken and serve on top of Spanish rice with the cumin sauce drizzled on top.

Recipe Sunday: Potato-Leek Gratin

With the (non-stop) snow and cold I decided to treat myself to scalloped potatoes last week. But, then I saw that our grocery store had leeks on sale, only 99 cents each. So, I decided to really treat myself, and make a potato-leek gratin. The main difference between the two, is that a gratin involves a cooked cheese sauce, whereas scalloped potatoes just involve putting layers of potato and onions in a casserole and pouring milk over the top.

Before I got to the sauce, I had a lot of prep to do – and a new toy to cut with. For Christmas my husband bought me a mandolin.  An actual mandolin.

I had wanted one for years, because my knife skills are lackadaisical at best. However: a) I’m ridiculously accident prone; and b) I like to drink while I cook dinner.
You can see how that could be problematic.

But, my husband assured me when I opened the mandolin on Christmas, that it has an excellent safeguard. So, last week I happily went into the kitchen, poured myself a glass of wine, and started prepping potatoes on my new gadget.

The gratin was perfect – cheesy and slightly fruity from the leeks and wine. And the trial run with the mandolin was a success. It was fantastic to not run across randomly undercooked potatoes for once, and (despite my wine consumption) I didn’t hurt myself at all.

Potato-Leek Gratin:

  • 4 medium Yukon Gold potatoes (sliced as thinly and evenly as you can)
  • 2 sliced leeks (white and pale green parts only)
  • 2 cups of shredded swiss cheese
  • 2 tablespoons of olive oil
  • ½ cup of white wine
  • 3 tablespoons of flour
  • 2 cups of warm milk (Heat in the microwave for 2 minutes)
  • ½ cup of shredded Parmesan
  • Black pepper to taste

Pre-heat the oven to 375 degrees.

Saute the leeks in the olive oil and white wine for 5 minutes. Add the flour and stir for 1 minute, then add the milk. When the lumps of flour have smoothed out add the swiss cheese in small batches stirring constantly until the cheese is integrated into the sauce.

Layer the potatoes in a buttered casserole dish and alternate with the cream/leek mixture. When you reach the top layer of sauce on potatoes sprinkle the Parmesan on top. Cover with foil and bake for 25 minutes, then remove the foil and bake until the potatoes are soft and the top is brown.
