Recipe Sunday: Orange and Star Anise Scones

I’ve been a nut for citrus lately. A nut! But, I overbought oranges and found myself desperately looking for ways to use them before they went bad.

We also had the world’s smallest and weirdest amount of grapefruit juice in the fridge. Seriously, like 2 tablespoons.

So I decided to play with citrus, and that made me think of some lovely warming flavors – which led me to the spice drawer.

And these guys were born.

They’re delicious.

However, now I just want to eat grapefruit glaze on everything.

Orange and Star Anise Scones with Grapefruit Glaze

Orange Scones 2

Yield: 8 scones.

Ingredients:

Star anise

  • 2 ½ cups unbleached, all-purpose flour
  • 1/3 cup granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon ground cardamom
  • 1 star ground anise pod
  • ½ stick butter, diced
  • 2 beaten eggs
  • ½ cup heavy cream + 1 tablespoon, for brushing
  • 1 peeled orange, diced
  • Sea salt
  • ½ cup powdered sugar
  • 2 tablespoons grapefruit juice

Instructions:

Preheat oven to 400 degrees.

In a mixing bowl, combine the flour, sugar, baking powder, cardamom, and star anise.

Add the butter and mix it in until it resembles small pebbles. Add the eggs and ½ cup cream. Stir well to combine.

Mix in the diced orange.

Liberally flour a flat work surface, and pat the dough out so that it’s about 1-inch thick.

Cut into rounds using a biscuit cutter, or thin water glass.

Scone rounds

Place on a silicone baking mat, and brush with remaining cream. Sprinkle with sea salt.

Bake for 12-15 minutes, or until a toothpick inserted into the center comes out clean.

In a small bowl whisk together the powdered sugar and grapefruit juice.

Let scones cool on a cooling rack.

Drizzle with grapefruit glaze.
