Recipe Sunday: Simple Apple Tart

Isn’t fall the best time for baking? Fruit is still plentiful, you can have the oven on without feeling like you live in Satan’s kitchen, and it is acceptable to add nutmeg to anything. I like this recipe because it is so simple: 7 ingredients and not a lot of prep required.

Ingredients

  • 1 pie crust (make your own or use a refrigerated one like Pillsbury)
  • 2 apples, peeled, cored, and sliced (I like to mix it up and use one Granny Smith and one Pink Lady)
  • 3 eggs
  • ¼ cup whipping cream
  • 4 tablespoons brown sugar
  • 1 teaspoon vanilla
  • Ground nutmeg

Preparation
Preheat the oven to 450ºF. Unroll the pie crust onto a 9 inch pie pan. Pierce the crust with a fork and bake the crust for 10 minutes or until light golden brown. Bring the oven temperature down to 350ºF. Beat the eggs, cream, sugar, and vanilla. Arrange the apples onto the pie crust. Pour egg mixture, making sure you cover all the apples. Sprinkle with nutmeg. Bake for 35-45 minutes. Serve with vanilla ice cream and a drizzle of caramel.
