I’ve been fighting off a cold, frantically cleaning for a week-long apartment guest – and dealing with a new freelance job that’s made me start to question my life choices.
So, playing in the kitchen hasn’t been much of an option. But when my husband bought me a beautiful bag of apples, I realized that a galette might make me feel a whole lot better. And it did.
Bonus: It only takes about 10 minutes to pull together if you have store bought pie dough. Or about 30 minutes if you need to make your own.
Normally I use lemon water when cutting apples, but using limes instead really made this pop. And I love the combination of cranberries and raisins, but fresh berries would be a fun substitution if you have them kicking around. Particularly blackberries or raspberries. Go wild with what you have!
Chipotle Apple, Onion and Fruit Galette
Serves 2.
Ingredients:
- 3 medium apples (Granny Smith, Crispin or Honeycrisp)
- 1 tablespoon lime juice
- 1 tablespoon olive oil
- 1 small red or white onion, sliced
- 2 teaspoons chipotle powder, or hot smoked paprika
- ¼ cup dried cranberries
- ½ cup raisins
- ½ teaspoon kosher salt
- ½ teaspoon freshly ground pepper
- 1 (9-inch) pie crust
- 1 egg (optional)
Instructions:
Preheat oven to 350 degrees.
Peel and core the apples, and slice them into ½-inch slices. While working on the apples, toss slices into a medium bowl filled with lime water. When all of the apples are prepared, quickly dry them on paper towels and toss into a bowl with olive oil, onion, chipotle powder, cranberries, raisins, salt and pepper.
Roll out pie dough and place on a baking sheet. Gently place the filling in the middle of the dough, leaving a 2-inch border. Pull the sides over the filling. If using egg, whisk it together with 2 teaspoons of water and brush over the top of the galette.
Bake for 30-35 minutes.
