Recipe Sunday: Date Brownies


These “brownies” should probably be called something else, since there is no cocoa in them. However, don’t let that stop you, as these are sure to be a hit for Thanksgiving and the rest of the year’s holiday celebrations.

Ingredients

  • 2 sticks butter, melted (1/2 lb.)
  • 4 cups brown sugar
  • 4 eggs, beaten
  • 3 cups unbleached flour
  • 4 teaspoons baking powder
  • 2 teaspoons salt
  • 1 teaspoon vanilla
  • 3 cups chopped walnuts or pecans
  • 1 cup chopped dates

Preparation
Preheat oven to 350 degrees F. Grease and flour a 9×13 pan. Mix butter and sugar, and slowly add the eggs and vanilla. In a separate bowl, whisk together the dry ingredients, and then add to the sugar mixture. Mix in nuts and dates. Place mixture in pan, and bake for 45 minutes, or until a toothpick inserted in the middle comes out clean. Wait for the brownies to cool completely before cutting into 1″ squares.
