Recipe Sunday: Fried Tillapia


The key to this crispy tillapia is using seasoned Panko and seasoned fish fry. We served it with seasoned sweet potato fries and a green salad, and it was such a hit I had to make it again a week later.

Ingredients
two small tillapia fillets
1/4 cup seasoned fish fry
1/2 cup seasoned Panko
1/4 flour
1/2 cup milk
enough vegetable oil for frying the fish, about 2 – 3 inches

Preparation
Preheat the oil in a deep frying pan to about 375 F, I put my electric burner on 5. Place the milk in a pie tin or a shallow bowl. Do the same for the flour. Mix the Panko and the fish fry together, and place them in a pie tin or shallow bowl. Dip a fillet in milk, then dip in flour covering completely, then dip in milk again making sure the milk covers the flour completely, and then dip in the Panko mixture, pressing on both sides to make sure the entire fillet is covered with breading. Do the same for the second fillet. When the oil is hot (throw a pinch of flour in the oil, if it fizzes, the oil is hot enough), place both tillapia fillets and cook, 5 minutes per side, turning once. Drain on paper towels and serve with lemon wedges and mustard aioli.
